The "Nassau" golf bet is the invention of John B. Coles Tappan the club captain of Nassau Country Club in 1900. The format was invented  because he didn't like lopsided results, he felt that he would rather lose 80 bucks in a five dollar Nassau with automatic presses than loose his "$5 match" by something big like 9 down 8 to go. From those of us who have taken our wives to dinner on Saturday night with our Nassau winnings or have salvaged the "bet" on the 18th green, thanks John!
